A flavorful and hearty Street Corn Chicken Rice Bowl made with juicy grilled chicken, creamy elote-style corn, and zesty cilantro lime rice. This bold and customizable dish is perfect for meal prep or a wholesome weeknight dinner.

Ingredients

For the Chicken:

  • 2 large chicken breasts, diced

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp cumin

  • Salt & pepper to taste

  • Juice of ½ lime

For the Rice:

  • 1 cup long-grain white or brown rice (cooked)

  • Juice of 1 lime

  • 2 tbsp chopped fresh cilantro

  • Salt to taste

For the Street Corn:

  • 2 cups corn kernels (fresh or frozen)

  • ¼ cup mayonnaise

  • ¼ cup crumbled cotija cheese

  • ½ tsp chili powder

  • Juice of 1 lime

  • Pinch of salt

Optional Toppings:

  • Sliced avocado

  • Chopped tomatoes

  • Sliced jalapeños

  • Extra cotija cheese

  • Lime wedges

Instructions

  • Marinate Chicken
    Toss chicken with olive oil, chili powder, paprika, cumin, garlic powder, lime juice, salt, and pepper. Let it sit for 15–30 minutes.

  • Cook Chicken
    Heat a skillet over medium heat. Cook marinated chicken until browned and fully cooked (5–7 minutes). Set aside.

  • Prepare Street Corn
    Char corn in a hot skillet or grill. Mix with mayonnaise, cotija, chili powder, lime juice, and salt.

  • Flavor the Rice
    Cook rice as per instructions. Stir in lime juice, cilantro, and salt.

 

  • Assemble the Bowl
    Layer rice, chicken, and corn mix in a bowl. Add your favorite toppings and serve warm!
